Pita Sandwiches

Serves 2 cooking time 10 minutes
2 whole wheat Pita breads
1 cup of spinach
½ cup shredded chicken
2 slices red onions
4 tablespoons of hummus; you can buy in any store in the specialty section
6 slices of cucumbers
One tomato seeded and chopped
2 slices of feta cheese and crumbled on top
2 tablespoons raw non fat yogurt


In all the grocery stores there are rotisserie chickens you can buy; shred it up and save for various kinds of meals put into containers and use in the week for lunch or dinner. For this meal; you only need enough for each pita sandwich you will be eating.
Coat the pita bread with 2 tablespoons of hummus, add chicken, spinach, onions tomato, cucumbers, feta cheese and top with yogurt. You can make a pita sandwich with anything you like, use your imagination. This is a quick and easy way to eat a nutritious meal for breakfast, lunch or dinner!
