Egg Salad Sandwich

Serves 2 cooking time 10 minutes
4 hard boiled eggs
2 tablespoons mayonnaise
2 teaspoons mustard
2 teaspoons sweet pickle relish
Salt/pepper to taste
Optional; sliced tomato and lettuce and sliced red onion
Good whole grain bread
Mash all the ingredients except the bread together in a bowl and spread on top of bread add sliced tomato, red onion and lettuce if you like. This makes a great breakfast, lunch or dinner; the perfect quick healthy meal!!!
