Pasta with Asparagus and Broiled Salmon

Cooking time 30 minutes
4-6 servings
1 lb of fresh wild salmon
1 lb of your favorite pasta, I use penne, fettuccini and pappardelle which ever I am in the mood for….
3-4 minced shallots
2-3 minced garlic
1 lb of asparagus cut on the diagonally into ½ inch pieces
1-2 tablespoon fresh dill chopped
1-2 tablespoons fresh mint chopped
Juice of 2 lemons
One lemon sliced thinly for serving
Zest of one lemon
1 c of vegetable broth
½  c of white wine
2 tablespoons of butter
One bunch of green onions cleaned and chopped
Salt and pepper to taste
Fresh grated parmesan on top if you like

In a large pot get your water boiling for the pasta. Preheat your oven for broiler to broiler your salmon for 8-10 minutes depending how well cooked you like your salmon if it has skin; place skin side down.
Salt, pepper and drizzle olive oil over salmon and put in the broiler to cook.
When water boils, throw in a tablespoon of salt and pasta to cook as directed on package.

In a large frying pan or large sauce pan that has been preheated to medium high heat; sauté the shallots and garlic until tender and translucent in the olive oil. Now add the white wine and reduce down to half; then add the vegetable stock and reduce down for 10 more minutes; then start whisking in butter ½ a tablespoon at a time until it is all in. Stir in the zest, dill, mint, green onions and lemon juice. Drain the pasta run cold water over it and rinse it off; add it to the frying pan of mixture and toss it all up. Take the salmon out of the oven when done; after it rests for 5 minutes cut it up into the 4-6 pieces for serving on top of the pasta mixture that you have in the pan. Salt and pepper to taste and add fresh grate parmesan on top if you like.  There you are a great dinner ready to eat!!!
