Oven Fried Drumsticks

Serves 4-6 people; preparation time 40 minutes
10 skinless drumsticks wiped dry
2 eggs beaten w/ 2 tablespoons of buttermilk
3 ½ tablespoons Dijon mustard
2 ½ cups of Panko crumbs found in your grocery store in the Asian section
1 cup of buttermilk
1 cup of flour
2 cups of Italian Bread Crumb seasoned; I use Progresso Italian Bread Crumbs season w/ Italian seasoning

Preheat your oven to 400 degrees. Start an assembly line with plates and pie pans works best for me. Whisk the Dijon mustard, eggs and 2 tablespoons of buttermilk together. First plate of assembly line is the flour, second one is the egg mixture, next is the Italian bread crumbs last is the Panko crumbs which you will press onto the drumsticks and coat the drumsticks very well all around.
Bake 25-35 minutes until golden brown; serve with a light salad and you are done! Or if you want a hearty meal serve with mashed potatoes and some steamed broccoli to round it out and give you some veggies to balance out the meal.
