Becky’s Chicken Tacos

Serving for 6-8
Cooking time; not frying shells; 30 minutes; frying tortillas; one hour
One rotisserie chicken from store; take chicken off bone; cut up in 1-2 inch- pieces; put in a bowl.
12-18 corn tortillas for frying or place on grill for soft tacos.
Becky’s homemade salsa; or your favorite salsa for topping.
1-2 c of grated cheddar cheese
Guacamole for topping


If frying the tortillas heat frying pan and add vegetable oil and fry the tortillas in pan; put on paper towels to drain.
If grilling place on low to medium heat turn once and place in tortillas holder or a covered bowl with a kitchen towel to keep warm.

If you are frying the tortillas you can make up the tacos and serve them with the toppings you like. If you are doing grilled, it is easier for everyone to make their own tacos and have all the toppings on the table.
Quick and easy meal; of course the healthier version is the grilled corn tortillas, not the fried ones; but I do love the fried taco shells! Serve with Spanish rice and beans and you are set!
